sous les mers

The new creation of Les ateliers Camus. Second chapter of a Tribute to Jules Verne Collection.

SOUS LES MERS

Maison Camus unveils the latest chapter of its collection inspired by Jules Verne’s Extraordinary Voyages. A tribute close to the heart of Cyril Camus, this creation honours the 19th-century French author whose work has long inspired his family, generation after generation. Staying true to his heritage while embracing a forward-looking vision, Cyril Camus has brought renewed momentum to the House: exploring new flavour territories and telling meaningful stories, blending technique, craftsmanship, and imagination — to create truly singular tasting experiences.

After the first chapter titled as L’Île Cognac, accompanied by a tasting table freely inspired by the novel Propeller Island, Les Ateliers Camus now dive into the masterpiece Twenty Thousand Leagues Under the Sea, delivering an exclusive cognac with unexpectedly saline and iodised notes.

Discover Sous les Mers, the new intensely aromatic cognac from Les Ateliers CAMUS.

De la rencontre de deux hommes à bord du Nautilus

à celle de deux femmes au sein de la Maison Camus

Sous les Mers is the title of a meeting, akin to the encounter between Captain Nemo and Professor Aronnax, two protagonists in Twenty Thousand Leagues Under the Sea, who come together through a series of circumstances, united by a shared fascination with the ocean. Julie Landreau and Isabelle Collignon have, in their own personal and free-spirited way, woven their interpretations of Jules Verne’s illustrious novel. One is a Master Blender, the other the Creative Director. Together, these two women transform Maison Camus into a maritime theater, where rare, exclusive, and singular cognacs take center stage.

Maître de chai

Julie Landreau

For Julie Landreau, cognac is a realm of experimentation and exploration. With a background in chemistry, she approaches each blend with a rare scientific precision. She knows the aromas in their molecular essence and masters the mechanisms of their transformation. Far from following established recipes, she invents, delves into unexplored paths. For the past five years, she has embodied this vision as the Master Blender at Maison Camus, where she now crafts every cognac from the Ateliers Camus. Much like Captain Nemo aboard the Nautilus, who refuses to set foot on land and instead manages to extract and cultivate various ingredients enhanced by the ocean’s depths, Julie Landreau draws inspiration from this to create a truly extraordinary cognac. An exceptional cognac.

La mer imite un nouveau chai polymorphe et sans cesse en action

For Sous les Mers, our Master Blender explores an innovative blending method, one unimaginable on dry land, taking Captain Nemo’s approach literally, as he discovers new cultivation techniques deep in the ocean. She brings this original idea to life through a practice she has shaped in her own way: In a 35-liter oak cask, Julie blends her eaux-de-vie at dawn before immersing them that very day in the Atlantic. The wood facilitates an exchange between the cognac and the sea, which continuously rocks the cask. As the alcohol is less dense than saltwater, a metal cage ensures the cask remains at the ocean’s bottom, protecting it. In the ingenious spirit of Captain Nemo, Julie Landreau adopts a physico-chemical approach to cognac in immersion: the absence of oxygen, atmospheric pressure, temperature, darkness, and the movement of the tides... This approach, in constant interaction with the elements, allows the cognac to absorb the information of a vibrant, energetic environment. Infused with briny flavors, new aromatic profiles emerge, ones that cannot be found on land.

Nose

The first nose is dynamic and briny, with the perfect alchemy between land and sea revealing subtle, delicate maritime notes. The second nose is subtle and airy, with the higher spirits on the periphery unveiling fruity aromas of citrus and fresh apricots.

profil gustatif

Palate

Elegance and exuberance on the initial entry, akin to seawater. The iodine and sea breeze evoke freshness and delicacy, set against the mineral backdrop of the flint from the Borderies. A second layer on the mid-palate reveals a rich and firm structure, with precision. The cognac takes the lead, first with the fruity notes of apricot, followed by praline and candied fruits, unfolding with depth and complexity.

ISABELLE COLLIGNON

For Isabelle Collignon, shapes, colors, and materials bring life to the gaze and sharpen our sense of beauty. The detail is everything; everything lies in the detail, where nuance finds its place. The act of reading creates vivid images, which converse with one another, harmonize, move and captivate, all while liberating: it is the very essence of the world that unfolds in the mysterious beauty of Jules Verne’s novel, in the subtle as much as in the spectacular and grandiose. From her reading, she sensed the birth, from the dark to the light, of a creature forged by light, a symbolic beast that is both fascinating and terrifying, a marvel of craftsmanship from Maison Camus. One must dwell between the lines to truly understand.

La Cristallerie Daum et la Maison Camus

Just as crystal is born from sand and minerals, cognac draws its strength from a land nourished by these very elements. Carried by their respective artisanal heritage, both Maison Camus and Maison Daum transcend time, echoing the names of their founding families at every turn. They preserve an ancestral know-how, which they develop by patiently and carefully incorporating the highest level of technical expertise. Who better than Daum Crystal, a sanctuary for sculpted fauna and flora for nearly a century and a half, to support Isabelle Collignon and the Ateliers Camus in creating this collectible piece? With their palette of 48 shades and mastery of crystal paste, every texture and every gleam is within their reach.
